The core problem is liquidity. A proof-of-work altcoin with a small market cap and low trading volume often has only one or two active trading pairs. Those pairs are usually against a stablecoin or against a major token like ETH or BNB. If you hold a coin that only trades against, say, a minor exchange's native token, you must first swap into that intermediate token, then move it to a venue where it can be exchanged for a stablecoin, and finally convert that stablecoin into something you can spend.

Important practical limits. Each hop costs a trading fee and exposes you to slippage. A three-hop route can easily eat 3-5% of your principal, more if the intermediate pair is thin. Network fees for the PoW coin itself can be high relative to its value. If your coin is worth less than the combined fees of the route, it is effectively trapped.
